CHEF VITO PATERNITI
My journey in the world of catering began many years ago,
when as a boy I worked with my father in the countryside,
with olive trees, artichokes, with the vegetable garden that I
hated so much at the time and that today I consider a
precious fortune.
For me, cooking has its value in simplicity.
It can only pay homage to my origins, Sicily, to my memories
and to the path of lives and experiences that have led me
to be here today.
It means respecting and giving value to the raw ingredients and to those who work with them, treating them with care and bringing to the plate the taste of tradition and research, seeking to convey a memory, an emotion and
a part of my story.
